Pale clementine in colour, this still skin contact Bacchus has a slight haze due to its lack of fining and filtration. It displays vibrant aromas of peach and white nectarine along with a hint of baked red apple, pink grapefruit and almond on the nose. These elements persist but are intermixed on the palate with apricots, fresh grapefruit zest and honey. Notes of white pepper and clove, along with just a touch of creaminess are present on the finish. Balanced, rich and savoury it exhibits light tannins and rounded soft acidity, making it very approachable, both for food pairings and as a stand alone wine.

Vinification:

  • Wild ferment
  • Bacchus destemmed directly to earthenware coralie where skin contact
  • fermentation followed for 30 days with daily cap submersions
  • Organic chaptalisation part way through ferment
  • Gentle press cycle just prior to ferment completion
  • Wine to a blend of old oak and steel to finish fermentation
  • 18 month post fermentation ageing on lees in in a mix of old oak and steel
  • Full spontaneous malolactic fermentation
  • Bottled unfiltered and unfined with a minimal sulphur addition
